Pass the Cranberry Sauce!

Bursting berries on my tongue,


Tasting of sugar finely spun,


Coil warmly in my belly


And melt my insides like jelly.


My toes curl under in pleasure


Of this wintery scarlet treasure.


The simple joy of cranberry's sweet


Yearly sweep me off my feet!

Recipe:

  • -2-3 bags of cranberries

  • 1 large carton of strawberries

  • 1-2 cartons of raspberries or blueberries to taste

  • 2-3 cups of stevia or sugar

  • honey to taste

  • 1 large lemon or some lemon juice

  • 2 small limes or some lime juice

  • 1-2 large, sweet, thin-peel variaty oranges

  • cinnamon


    With enough water to stew them, boil cranberries, sweetener, and cinnamon together in a lidded pot. Meanwhile, slice oranges and blend with honey in a food processor, peel and all. Add this to the boiling pot. Quarter the strawberries (remove green tops and save for a salad later or something) and add to pot with lemon and lime juice to taste. Add raspberries (or blueberries) last. Boil on medium-low heat until saucy. Chill and serve cold.

    Great on turkey or stuffing, fabulous on cheesecake or ice cream!
